
Curried Sausages is a lovely one pot wonder that doesn’t take too long to cook This recipe goes very well with the keto cauliflower mash recipe, it also makes wonderful leftovers the next day.
Keto curried sausages

Ingredients
- 8 beef sausages.
- 2 Tbsp of oil
- 1/2 an onion thinly sliced
- 1 garlic clove minced
- 1 1/2 Tbsp of curry powder
- 1 cup of beef stock
- 2 Tbsp of tomato paste
- 1/4 cup of cream.
- 50 grams of baby spinach (i used frozen spinach)
Method:
- In a large saucepan heat one tablespoon of oil over a medium heat.
- Add the sausages poke with a fork to allow the oil to escape.
- Cook, turning regularly until done.
- Remove from pan and set aside.
- In the same pan add the remaining one tablespoon of oil, crushed garlic and sliced onion.
- Sauté until translucent and fragrant.
- Add the curry powder to the pan and cook for one minute until fragrant
- Add the beef stock and tomato paste and mix it thoroughly to combine.
- Simmer for 10 minutes until starting to thicken.
- Taste for additional curry powder, salt or pepper
- Slice the sausages into two centimetre chunks and return to the pan tossing through the sauce.
- Stir through the cream evenly, add the spinach last.
- Serve with your choice of side or just by its self.
